Ingredients

2 large beets, peeled and thinly sliced

1 sheet of frozen puff pastry, thawed

1/2 cup goat cheese, crumbled

1/4 cup chopped fresh thyme

1/4 cup chopped fresh rosemary

Salt and pepper to taste

1 egg, beaten (for egg wash)

Preheat the oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface to a thickness of about 1/8 inch.
