About GoPlated: Where Low FODMAP Meets Delicious

Hey! We’re GoPlated. And We’re So Glad You’re Here.
If you’re reading this, there’s a good chance you or someone you care about is navigating the complex world of digestive health. Maybe you’ve been newly diagnosed with IBS or SIBO. Maybe you’ve been managing symptoms for years, but feel overwhelmed by conflicting FODMAP information. Perhaps you’re tired of feeling like your food choices are limited to bland salads and plain rice.
We get it. We’ve been there. And we’re here to help.

Our Purpose: Why GoPlated Exists
Here’s the truth: When Sarah (our dietitian) was first handed a photocopied FODMAP sheet in a doctor’s office, she felt more confused than helped. When James (our chef) tried to cook for his partner Elena after her SIBO diagnosis, he accidentally made things worse with all the garlic and onions he thought were essential. When Emma (our community manager) started the Low FODMAP elimination phase with two young kids and a full-time job, she cried in the grocery store parking lot because it felt impossibly complicated.
We founded GoPlated because navigating Low FODMAP living shouldn’t require a nutrition degree, unlimited time, or the willingness to eat boring food forever.
Our purpose is simple: Make low-FODMAP living achievable, delicious, and stress-free for people managing IBS, SIBO, and digestive sensitivities.

Our Mission: What We Do Daily
Every single day, our team tests, refines, and shares Low FODMAP recipes across all meal categories: breakfast, lunch, dinner, snacks, desserts, and meal prep. But we do more than just publish recipes.
We:
Verify every ingredient against Monash University’s FODMAP database
Test each recipe a minimum of three times in real home kitchens (not just professional test kitchens)
Include serving size guidance because FODMAPs are dose-dependent
Provide substitution options for common dietary restrictions
Explain the “why” behind the science without overwhelming you with jargon
Answer every reader question personally (yes, really, we read every email)
We’re not here to sell you meal plans or supplements or miracle cures. We’re here to give you reliable, tested recipes so you can eat confidently again.

Our Vision: Where We’re Going
We envision a world where:
No one with IBS feels isolated or ashamed of their symptoms
FODMAP information is accurate, accessible, and actually helpful
Families can share meals without anyone eating something different
Low FODMAP cooking is recognized as real cooking, not “diet” cooking
Every person with digestive struggles finds relief, community, and food joy
Our long-term goal: Become the most trusted Low FODMAP recipe resource globally, where every recipe is Monash-verified, every ingredient is vetted, and every person finds meals that work for their unique body.

Our Core Values: What We Stand For

Evidence-Based
We follow Monash University’s FODMAP research, consult with gastroenterologists, and update our content as new studies emerge. No pseudoscience, no trendy nonsense, just peer-reviewed, clinically-tested information.

Empathy First
We understand the fear that comes with IBS flare-ups. The embarrassment. The cancelled plans. The well-meaning advice that doesn’t help. We’ve lived it, and we approach every recipe and article with that lived experience.

Practical Simplicity
Real families need meals they can actually make on a Tuesday night after work when everyone’s tired and hungry. We don’t do complicated, Instagram-perfect recipes that require specialty equipment. We do real food for real life.

Tested Reliability
Every recipe is tested multiple times by our team AND by volunteer home cooks in our IBS community. If a recipe doesn’t work consistently, it doesn’t get published. Period.

Transparent Honesty
We’re honest about when recipes fail (James has burned more batches of Low FODMAP brownies than he’d like to admit). We’re clear about recipe limitations. We disclose when we’re working with affiliate partners. Trust is everything.

Meet Our Expert Team: The Humans Behind GoPlated

Sarah Martinez, MS, RDN, CEDRD-S
Registered Dietitian & Low FODMAP Specialist
Sarah brings both clinical expertise and personal experience to GoPlated. After her own IBS diagnosis in college led her to change her major to nutrition science, she spent a decade working with over 300 digestive health clients.
She’s the science brain behind every recipe, cross-checking ingredients, verifying serving sizes, and translating complex FODMAP research into information you can actually use. When she’s not developing recipes or seeing clients, she’s hiking Portland’s trails and reading food history books.
Expertise: Digestive health, IBS/SIBO management, FODMAP diet, eating disorder recovery
Credentials: MS in Nutrition (Oregon Health & Science University), Registered Dietitian Nutritionist, Certified Eating Disorder Registered Dietitian Supervisor

James Rivera
Recipe Developer & Home Chef
James graduated from the Culinary Institute of America, dreaming of Michelin stars and French techniques. Then he married Elena, who has SIBO, and suddenly garlic and onions (his favorite ingredients) were off the table.
That challenge transformed his cooking. James now specializes in developing low-FODMAP recipes that prioritize flavor alongside safety. His philosophy: if his non-FODMAP friends wouldn’t choose to eat it, it doesn’t get published. He’s our kitchen perfectionist and meal prep strategist.
Expertise: Recipe development, flavor building without high-FODMAP ingredients, meal prep, culinary technique
Background: Culinary Institute of America graduate, 15 years of professional cooking experience

Emma Caldwell
Content Manager & IBS Advocate
Emma isn’t a dietitian or a chef; she’s a mom of two who’s been managing IBS for over twelve years. She’s the person who burned rice following a “simple” recipe, who’s cried in grocery stores, and who’s cancelled plans because her stomach decided otherwise.
Emma manages GoPlated’s content strategy, community engagement, and real-life meal planning resources. Her superpower: translating expert knowledge into practical strategies for busy people juggling work, family, and digestive chaos. If you’ve ever felt overwhelmed by FODMAP information, Emma’s your person.
Expertise: IBS management, meal planning for families, reintroduction strategies, community building
Background: Certified Health Coach (IIN), IBS advocate, and support group facilitator since 2013

How We Actually Do This Work: Our Recipe Process
We’re obsessive about recipe quality. Here’s what happens before any recipe goes live on GoPlated:

Step 1: Research & Ingredient Verification (Sarah)
Sarah cross-checks every ingredient against Monash University’s FODMAP app and current research. She verifies serving sizes and flags potential issues.

Step 2: Recipe Development (James)
James develops the recipe in his home kitchen, testing cooking times, adjusting seasonings, and figuring out substitutions. Most recipes go through 3-5 iterations before he’s satisfied.

Step 3: Community Testing (Emma + Volunteers)
Emma coordinates volunteer testers from our IBS community, real people in real kitchens with varying cooking skills. We get feedback on clarity, timing, and taste.

Step 4: Final Review (Full Team)
Sarah confirms FODMAP accuracy. James verifies cooking instructions. Emma ensures the recipe is practical for busy families. Only then does it get published.

Step 5: Ongoing Updates
When Monash University updates its FODMAP data (which happens regularly), Sarah reviews affected recipes, and we update immediately. When readers report issues, we test again and adjust.

Why Trust Us? Our Commitment to Quality
We don’t publish anything we haven’t personally tested. No stock recipes pulled from elsewhere. No AI-generated content pretending to be human-written. Every recipe comes from our actual kitchens.
We stay current with FODMAP research. Monash University updates its data regularly as new foods are tested. We subscribe to digestive health journals and adjust our content accordingly.
We’re transparent about limitations. Low FODMAP is individualized; what works for Sarah might not work for Elena. We can’t promise every recipe will work for everybody, and we’re honest about that.
We have real credentials. Sarah is a licensed Registered Dietitian. James is a trained chef. Emma has lived with IBS for over a decade. This isn’t a hobby blog; it’s our professional focus.
We answer questions. Seriously, email any of us. We respond personally to every message. (It sometimes takes a few days during busy weeks, but we respond.)

Our Community: That’s You!
GoPlated exists because of readers like you, people managing IBS, SIBO, or digestive sensitivities who deserve better than bland, boring “diet” food.

We’ll answer your questions. Email us. We’re real humans who respond.
We won’t sell you snake oil. No miracle supplements, no detox teas, no pseudoscience. Just food.
