  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup cold unsalted butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 medium-sized apples, peeled and sliced
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Why This Recipe Works

  • By using a combination of butter and sugar in the dough, we achieve a flaky and lightly sweetened pastry that perfectly complements the filling.
  • The addition of eggs enriches the pastry, making it more robust and textured.
  • The perfectly balanced blend of cinnamon and nutmeg in the filling creates an intricate, sweet-and-savory dance on the palate.

Key Ingredients

For this recipe, you’ll want to use high-quality apples that hold their shapes well when cooked. Granny Smith or Honeycrisp work beautifully. You may also choose to use store-bought apple pie filling if you’re short on time, but homemade is, of course, always preferred. When it comes to spices, choose fresh cinnamon sticks and whole nutmeg berries for the most potent flavor. As always, never overmix the dough to ensure it remains flaky and tender.

When selecting flour, look for bread or pastry flour that contains more protein, which will give our pastries extra texture. Lastly, always choose high-quality baking butter with a good balance of water and solids for a richer taste.

Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup cold unsalted butter

2 large eggs

2 teaspoons vanilla extract

2 medium-sized apples, peeled and sliced

1 teaspoon cinnamon

1/4 teaspoon nutmeg

Directions

1
In a large mixing bowl, combine the flour, sugar, and cold unsalted butter. Use a pastry blender or your fingertips to work the butter into the flour until it resembles coarse crumbs.

2
Add the eggs and vanilla extract, mixing until the dough forms a cohesive ball. Wrap it in plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

3
On a lightly floured surface, roll out the chilled dough to a 1/4-inch thickness. Cut out circles of dough using a round cookie cutter.

4
In a small bowl, mix together the sliced apples, cinnamon, and nutmeg. Spoon a tablespoon of this mixture onto one half of each dough circle, leaving a 1/2-inch border. Fold the dough over the filling, pressing the edges together with a fork to seal.

5
Heat the oven to 400°F (200°C). Place the turnovers on a baking sheet lined with parchment paper, leaving 1 inch of space between each. Brush the tops with egg wash and bake for 25 minutes, or until golden brown. Enjoy warm and crispy!

Storage & Reheating

These apple turnovers are best enjoyed fresh, but if you need to store them, let them cool completely before transferring them to an airtight container. You can store them in the refrigerator for up to 3 days or freeze them for up to 2 months. To reheat, simply thaw frozen turnovers and bake in a preheated oven at 350°F (180°C) for an additional 5-7 minutes, or until crispy.
