The ketchup should be a good-quality brand that’s low in added sugars and preservatives.

1 can (14.5 oz) diced tomatoes

1 cup ketchup

2 tbsp chili powder

1 tsp ground cumin

Salt and pepper to taste

Add the remaining 1 tablespoon of oil to the skillet, then add the onion, garlic, and red bell pepper. Cook until the vegetables are tender, about 5-7 minutes.

3
Add the cooked chicken back to the skillet, along with the diced tomatoes, ketchup, chili powder, and cumin. Stir to combine, then reduce heat to low and simmer for 10-15 minutes, or until the sauce has thickened and the chicken is cooked through.

4
Split the hamburger buns in half and toast until lightly browned. Spoon the chicken mixture onto the buns, then serve immediately.

5
Serve immediately and enjoy!
