Yield:

Ingredients

1 large onion

2 cloves garlic

1 cup shredded cheese

4 large potatoes

1 teaspoon paprika

1 teaspoon cumin

1 can black beans, drained and rinsed

1/4 cup chopped fresh cilantro

Salt and pepper, to taste

4 large tortillas

Directions

1
Peel and dice the potatoes, then place them in a large pot of cold water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the potatoes are tender when pierced with a fork.

2
While the potatoes are cooking, heat a large skillet over medium-high heat. Add the diced onion and cook, stirring occasionally, until the onion is translucent and starting to caramelize, about 5-7 minutes.

3
Add the minced garlic to the skillet and cook for 1-2 minutes, stirring constantly, until fragrant.

4
Drain the potatoes and add them to the skillet with the onion and garlic. Cook for 2-3 minutes, stirring occasionally, until the potatoes are well combined with the onion mixture.

5
Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Assemble the burritos by spooning the potato mixture onto the center of each tortilla, followed by a sprinkle of shredded cheese. Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly.

Storage & Reheating

To store leftovers, allow the burritos to cool completely, then wrap them individually in plastic wrap or aluminum foil and refrigerate for up to 3 days. To reheat, microwave a wrapped burrito for 20-30 seconds, or until warm and steaming.
