Ingredients

1 1/2 pounds boneless, skinless chicken breast or thighs

1 large onion, sliced

2 cloves garlic, minced

1 large red bell pepper, sliced

1 large yellow bell pepper, sliced

1 can diced tomatoes, 14 1/2 oz

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (optional)
