Ingredients

2 chicken breasts

1 cup canned mozzarella cheese

1/4 cup fresh parsley, chopped

1 tsp garlic powder

1 tsp Italian seasoning

1 cup breadcrumbs

4 oz olives, pitted (optional)

1/4 cup minced parmesan cheese (optional)

Directions

Preheat the oven to 400 degrees Fahrenheit. In a medium bowl, combine the shredded mozzarella cheese, chopped parsley, garlic powder, and Italian seasoning.

Dip each chicken breast half in the beaten egg and then coat in the breadcrumb mixture, pressing the crumbs onto the chicken to help them stick. Place the coated chicken on a baking sheet lined with parchment paper.
