Ingredients

1 1/2 sticks (6 tablespoons) unsalted butter, at room temperature

1 cup (200g) white granulated sugar

2 eggs, at room temperature

1 cup (120g) all-purpose flour

1 teaspoon baking powder

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 cup (60g) chopped walnuts (optional)

Directions

1
Preheat the oven to 350°F (180°C) and grease an 8-inch square baking pan with non-stick cooking spray. Line the bottom with parchment paper and set aside.

2
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.

3
In a separate bowl, whisk together the flour, baking powder, and cinnamon. Add the dry ingredients to the wet ingredients and mix until just combined.

4
Stir in the chopped walnuts (if using) and pour the batter into the prepared baking pan. Smooth out the top and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

5
Remove the blondies from the oven and let them cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

Storage & Reheating

Once the blondies have cooled completely, you can store them in an airtight container at room temperature for up to 3 days. You can also freeze them for up to 2 months and thaw them at room temperature when you’re ready to enjoy. When reheating, simply place the blondies in the microwave for 10-15 seconds or until warmed through.
