  • 1/4 tsp ground allspice
  • 1 egg, beaten (for egg wash)
  • 1 tbsp granulated sugar

Why This Recipe Works

  • The combination of a buttery pastry crust and sweet apples creates a harmonious balance of flavors.
  • The use of cold butter and a simple rolling technique ensures a flaky crust.
  • The addition of spices and sugar adds warmth and depth to the filling.

Key Ingredients

For the flakiest crust, it’s essential to use cold butter and ice-cold water. You can also try using a pastry blender or food processor to mix the butter and flour quickly and efficiently.

When selecting apples, choose a mix of sweet and tart varieties, such as Granny Smith and Fuji, for a balanced flavor. Slice the apples thinly to prevent them from becoming too soggy during baking.

Ingredients

2 cups all-purpose flour

1 tsp salt

1/2 cup cold unsalted butter, cut into small pieces

2-3 apples, peeled and sliced

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground allspice

1 egg, beaten (for egg wash)

1 tbsp granulated sugar

Directions

1
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

2
In a large bowl, combine the flour, salt, and cold butter. Use a pastry blender or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

3
Gradually pour in the ice-cold water, stirring with a fork until the dough comes together in a ball. Divide the dough in half and shape each half into a disk.

4
On a lightly floured surface, roll out each disk of dough to a thickness of about 1/8 inch. Transfer the dough to a 9-inch pie dish and trim the edges to fit.

5
Fill the pie crust with the sliced apples, dot with butter, and sprinkle with cinnamon, nutmeg, and allspice. Roll the remaining dough to a thickness of about 1/8 inch and use to cover the pie. Crimp the edges to seal and cut a few slits in the top for ventilation.

Storage & Reheating

Let the pie cool completely on a wire rack before storing it in an airtight container at room temperature for up to 3 days. To reheat, wrap the pie in foil and bake at 350°F (180°C) for 15-20 minutes, or until warmed through.
