12 oz spaghetti

4 oz pancetta, diced

2 cloves garlic, minced

1 cup grated Parmiggiano-Reggiano cheese

4 large eggs

Salt and pepper

Fresh parsley, chopped

Cook spaghetti in a large saucepan of boiling salted water until al dente, about 8 minutes; reserve 1 cup pasta water and then drain. In a medium skillet, cook the pancetta over moderate heat, stirring occasionally, until crispy. Remove the pancetta from the heat and stir in garlic.
