Why This Recipe Works

  • This no-bake dessert hack relies on the magic of crystallization, where natural peanut butter and coconut flakes create a rich, creamy base. It’s a genius way to avoid using traditional dairy or refined sugars!
  • The protein powder adds a nutty flavor and helps to bind the whole mixture together, while the dark chocolate chips provide an indulgent touch.
  • The antioxidant-rich berries add a pop of color and a burst of juicy sweetness, making this dessert both satisfying and guilt-free.

Key Ingredients

When it comes to choosing the perfect ingredients, quality matters. Look for a high-quality natural peanut butter with minimal added oils and sugars. For the coconut flakes, opt for large, unsweetened flakes that will add a nice texture to the final product.

If you’re feeling adventurous, try substituting the raw honey with a drizzle of pure maple syrup for a slightly different flavor profile. Just be sure to adjust the amount according to your taste preferences.

Yield:
4 Servings

Ingredients

1 cup unsweetened almond milk

2 scoops vanilla protein powder

1/4 cup natural peanut butter

1/4 cup coconut flakes

Xylitol sweetener (or 1 tbsp honey)

3/4 cup dark chocolate chips

1 cup fresh berries (strawberries, blueberries, raspberries)

Directions

1
In a blender or food processor, combine the almond milk, protein powder, peanut butter, and coconut flakes. Blend on high speed until the mixture is smooth and creamy, stopping to scrape down the sides as needed.

2
Pour the mixture into individual serving cups or a large serving dish. Refrigerate for at least 30 minutes to allow the mixture to set.

3
Just before serving, drizzle with honey or Xylitol sweetener (if using) and sprinkle with chocolate chips and fresh berries.

4
Garnish with additional fresh berries and chocolate chips, if desired. Serve chilled and enjoy!

5
Store leftover parfait in the refrigerator for up to 3 days. Cover with plastic wrap or aluminum foil and allow to come to room temperature before serving.

Storage & Reheating

For best results, store the parfait in the refrigerator and allow it to come to room temperature before serving. If refrigerated for an extended period, the creaminess may thicken – simply stir well and let it sit at room temperature for a few minutes to restore its creamy texture.
