Why This Recipe Works

  • This recipe works because it combines lean beef with nutrient-dense vegetables, resulting in a balanced and satisfying meal that’s both healthy and delicious.

  • The addition of Parmesan cheese adds a salty and nutty flavor that complements the beef and vegetables perfectly.

Key Ingredients

This recipe requires some key ingredients to deliver the best flavor and texture. Here’s a closer look at each:

First, we have the lean beef, which is the star of the show. Choose a high-quality cut that’s at least 90% lean to ensure maximum protein content and minimal fat. A good brand like Grass-Fed Beef would be a great choice.

Next, we have the pasta, which should be a high-quality, whole-grain variety to provide sustained energy and fiber. A good brand like Barilla would be a great choice.

Ingredients

2 cups flour

1 tsp salt

1 lb lean beef (90% lean or higher)

8 oz pasta (such as penne or rotini)

2 cups mixed veggies (such as bell peppers, onions, and mushrooms)

1 cup grated Parmesan cheese

1 tsp dried basil

1 tsp olive oil

Salt and pepper to taste

1 cup chicken broth

Directions

1
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

2
In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook until browned, about 3-4 minutes. Remove from heat and set aside.

3
Add the mixed veggies to the skillet and cook until tender, about 5 minutes. Add the cooked beef back into the skillet and stir to combine.

4
In a large saucepan, combine the reserved pasta water, chicken broth, and Parmesan cheese. Bring to a simmer over medium heat and cook until the cheese is melted and the sauce is smooth.

5
Combine the cooked pasta, beef and veggie mixture, and sauce in a large serving bowl. Toss to combine and serve hot, garnished with fresh basil and Parmesan cheese if desired.

Storage & Reheating

To store leftovers, let the pasta cool completely and then transfer it to an airtight container. Store in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the microwave or oven until warmed through.
