Ingredients

2 cups bow tie pasta

1 (3-4 pound) rotisserie chicken

2 cups cherry tomatoes

1 cup sliced mushrooms

2 cloves garlic, minced

1 cup grated Parmesan cheese

1/4 cup olive oil

1 teaspoon dried basil

Salt and pepper, to taste

Directions

1
Preheat oven to 400°F (200°C). Cut the rotisserie chicken into bite-sized pieces and place on a baking sheet with the cherry tomatoes and sliced mushrooms. Drizzle with olive oil and sprinkle with dried basil. Roast in the preheated oven for 15-20 minutes, or until the chicken is heated through and the vegetables are tender.

2
Cook the bow tie pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

3
In a large skillet, combine the cooked pasta, roasted chicken and vegetables, and grated Parmesan cheese. Toss to combine, adding some reserved pasta water if the mixture seems dry. Season with salt and pepper to taste.

4
Serve hot and enjoy!

5
For a creamier version, top with a dollop of Greek yogurt or ricotta cheese.

Storage & Reheating

Store leftover pasta in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water to prevent drying out.
