When it comes to cheese, you can’t go wrong with a sharp cheddar. It’s rich, tangy, and has a lovely bite that pairs perfectly with the sausage. As for the sausage, make sure it’s a high-quality product with a nice balance of spices. You want it to be flavorful, but not overpowering.

Yield:
4 Servings

Ingredients

1 cup all-purpose flour

1/2 cup cold butter, cut into small pieces

1 cup grated cheddar cheese

4 high-quality sausage patties

1 cup crushed crackers (e.g., Ritz or saltines)

1/4 cup milk

1 tsp baking powder

Salt and black pepper to taste

Directions

1
Preheat the oven to 375°F (190°C). In a medium bowl, whisk together the flour, butter, and salt. Add the cold milk and stir until a shaggy dough forms. Divide the dough into 4 equal pieces.

2
On a lightly floured surface, roll out each piece of dough to a thickness of about 1/8 inch (3 mm). Use a biscuit cutter or a glass to cut out rounds of dough. Gather the scraps, re-roll the dough, and cut out more rounds.

3
In a small bowl, mix together the cheddar cheese, sausage, and crushed crackers. Spoon a small amount of the cheese mixture onto one half of each dough round. Fold the other half of the dough over the filling to form a triangle, pressing the edges to seal.

4
Brush the tops of the Iowa Party Bites with a little bit of milk and sprinkle with some chopped onion powder (optional). Bake the bites on a parchment-lined baking sheet for 12-15 minutes, or until the tops are golden brown and the pastry is crispy.
