Ingredients

2 lbs boneless, skinless chicken breasts

1 cup olive oil

4 cloves garlic, minced

1 tsp dried thyme

1 tsp paprika

Salt and pepper, to taste

Fresh parsley, chopped (optional)

Directions

1
Preheat your oven to 400°F (200°C). In a large bowl, whisk together 2 tbsp of olive oil, 2 cloves minced garlic, 1 tsp dried thyme, and 1 tsp paprika.

2
Season the chicken with salt and pepper. Add the chicken to the bowl and toss to coat evenly with the garlic-oil mixture.

3
Line a baking sheet with parchment paper or aluminum foil. Place the coated chicken breasts on the prepared baking sheet and bake for 20-22 minutes or until cooked through. Let rest before serving.

4
Toss the remaining garlic-oil mixture into the pan and sauté for 1-2 minutes, stirring occasionally, until the garlic reaches a fragrant golden brown. Scrape up any browned bits from the bottom of the pan.

5
Brush the pan juices over the rested chicken before serving. Garnish with chopped parsley, if desired, and serve hot.

Storage & Reheating

For leftover chicken, store it in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat the chicken in the oven or microwave, adding a splash of chicken broth if needed to prevent drying out.
