Key Ingredients

When it comes to choosing the right ingredients for this recipe, quality matters. Here’s what you need to know:

Yield:

Ingredients

4 boneless, skinless chicken breasts

2 cloves of garlic, minced

2 lemons, juiced

1 cup chicken broth

2 tbsp olive oil

Salt and pepper to taste

Chopped fresh parsley for garnish

Cooked quinoa or rice for serving

Directions

1
In a large bowl, whisk together lemon juice, garlic, olive oil, salt, and pepper. Add the chicken breasts and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.

2
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off. Cook the chicken for 5-7 minutes per side, or until cooked through. Transfer the chicken to a plate and cover with foil to keep warm.

3
Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the garlic and cook, stirring constantly, for 1-2 minutes or until fragrant.

4
Pour in the chicken broth and bring the mixture to a simmer. Scrape up any browned bits from the bottom of the skillet and cook for an additional 2-3 minutes or until the sauce has thickened slightly.

5
Slice the cooked chicken and serve with the garlic sauce spooned over the top. Garnish with chopped fresh parsley and serve over cooked quinoa or rice.

Storage & Reheating

For best results, store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop until warmed through.
