Ingredients

2-3 large Russet or Idaho potatoes

1 lb ground beef

1 cup shredded cheese (Cheddar or Monterey Jack)

1 cup sour cream

1 can diced tomatoes

1 head fresh lettuce

1 packet taco seasoning

Preheat your oven to 400°F (200°C). Wash and poke the potatoes with a fork several times to allow steam to escape. Rub with a tablespoon of oil and sprinkle with salt. Bake for 15-20 minutes, or until they’re tender when pierced with a fork.
