My 1 Secret Ingredient Pasta Salad

Ingredients

12 oz (340g) pasta of choice (e.g., pennoni or rotini)

1 cup (115g) cucumber, sliced

1 cup (115g) cherry tomatoes, halved

1 cup (250g) mayonnaise

2 tbsp Dijon mustard

Fresh parsley (chopped)

1/4 cup Red onion , thinly sliced

2 cloves Garlic , minced

Salt and pepper

Directions

Cook pasta according to package instructions until al dente . Drain and set aside.

Cut cucumber, cherry tomatoes and red onion into desired sizes. Set aside.

In a large bowl, whisk together mayonnaise, mustard, salt and pepper. Add cooked pasta and toss to coat.

Stir in sliced red onion and chopped parsley. Cover and refrigerate for at least 30 minutes before serving.
