Yield:
4 Servings

Ingredients

2 cups boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp garlic powder

1 tsp Italian seasoning

Salt

1 cup mixed vegetables (such as bell peppers, onions, broccoli)

1 lemon, quartered

2 cloves garlic, minced

1 tsp dried thyme

Directions

1
Preheat your oven to 400°F (200°C). In a large bowl, whisk together olive oil, garlic powder, Italian seasoning, salt, and thyme until well combined. Add the chicken breasts and toss to coat evenly, then set aside.

2
Transfer the chicken and any accumulated juices to the prepared sheet pan, arranging it in a single layer. Roast in the preheated oven for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

3
Meanwhile, prepare the mixed vegetables by tossing them in a little olive oil, salt, and pepper until evenly coated. Add the vegetables to the sheet pan with the chicken and roast for an additional 5-7 minutes or until they’re tender. Remove from the oven, squeeze the quartered lemon over the top, and let rest for 5 minutes before slicing and serving.

4
Divide the chicken and vegetables between your plates and garnish with minced garlic before serving. Enjoy over mashed potatoes or rice for a complete meal.

5
Author tip: For an added pop of color and crunch, consider adding some cherry tomatoes and a sprinkle of parsley on top of the dish before serving.

Storage & Reheating

Store the leftover chicken and vegetables in an airtight container for up to 3 days, or freeze for up to 3 months. To reheat, simply place the desired portion in the microwave or oven.
