Yield:
4 Servings

Ingredients

1 lb boneless, skinless chicken breasts

2 tbsp unsalted butter

1 tsp ground cumin

1 tsp curry powder

1/2 tsp garam masala powder

1/4 tsp turmeric

1/4 tsp red chili powder

1/4 tsp salt

1/4 tsp black pepper

2 cups plain yogurt

2 tbsp heavy cream

2 tbsp chopped fresh cilantro (for garnish)

Directions

1
Rinse the chicken and pat it dry using paper towels to remove any excess water. Place the butter in a large skillet over medium-high heat, then sprinkle the cumin, curry powder, garam masala powder, turmeric, red chili powder, salt, and black pepper over it. Spread the chicken across the skillet, making sure they have adequate space to cook evenly. Let the chicken cook for 5-6 minutes, or until they are nicely seared.

2
Flip the chicken and let it cook for an additional 5-6 minutes on the other side until it is cooked to your preference. You can tell if the chicken is cooked through by checking the internal temperature with a meat thermometer – it should read at 165°F (74°C) for medium-rare, 180°F (82°C) for medium, and 195°F (90°C) for well-done.

3
Transfer the chicken to a plate, and choose a new area of the skillet to melt the remaining 2 tbsp of butter. Pour the yogurt, heavy cream, and a pinch of salt into the pan, then reduce the heat to low and simmer, stirring occasionally, until the sauce has thickened to your liking. This should take about 10-12 minutes.

4
Return the chicken to the skillet and simmer uncovered for an additional 2-3 minutes. Stir gently to coat the chicken evenly in the sauce. Garnish with chopped cilantro and serve the chicken with a maximum amount of sauce spooned over it. Enjoy!

5
Serve immediately, garnished with cilantro and a dollop of extra sauce on top, if desired. Cover and refrigerate leftovers for up to 3 days or freeze for up to 2 months.

Storage & Reheating

For best results, try to refrigerate or freeze this dish as soon as possible after you’re done eating. If refrigerated within 2 hours of cooking, and then reheated to the right temperature, it’s safe to consume within 3-4 days. Reheating: Thaw frozen skillet butter chicken overnight in the fridge, then reheat at 300°F (150°C) in the oven for 20-25 minutes, or until it reaches an internal temperature of 165°F (74°C). Let it sit for 5 minutes before serving.
