Imagine a crisp autumn evening, the air is cool, and the leaves are rustling in the gentle breeze. You’re standing at your kitchen counter, simmering pot of golden broth, and the aroma of rich vegetables wafts through the air, tantalizing your taste buds. This is the epitome of comfort, the essence of a warm and inviting home. The sound of a ladle pouring steaming hot soup into a waiting bowl is like music to the ears.

As you gaze into the bowl, the vibrant colors of the vegetables dance before your eyes, and the tender, flavorful broth beckons you to take a sip. This harmonious balance of texture and taste is what makes this soup truly special. For a truly transcendent experience, try pairing it with a crusty bread and a side salad, just as I did in my Related Recipe that you’ll also love.

  • This recipe works because of the harmonious balance of flavors, the symphony of sweet and savory, and the textural variety of the vegetables, all of which come together to create a truly unforgettable eating experience.

  • The finishing touch of a drizzle of honey adds a touch of sweetness and balances out the savory elements.

Key Ingredients

While you might be able to find decent substitutes for some of these ingredients, I urge you to splurge for the best quality you can find. For instance, make sure to use organic vegetables and the best olive oil you can afford. For the best flavor, the key is to use roasted butternut squash, which adds an incredible depth of flavor to the soup. Make sure to roast it until it’s tender and caramelized to bring out its full potential.

Also, I want to stress the importance of using high-quality, flavorful carrots. They add a refreshing crunch and a pop of color that sets this dish apart. When shopping for carrots, look for the ones that are locally grown and organic for the best flavor.

Ingredients

2 cups butternut squash

1 large onion, chopped

3 cloves garlic, minced

1 cup carrots, sliced

1 cup canned diced tomatoes

4 cups chicken broth

2 tbsp olive oil

1 tsp dried thyme

Salt and pepper, to taste

Optional: 1 tsp honey

Directions

1
Preheat the oven to 400°F (200°C). Place the butternut squash cut side up on a baking sheet, drizzle with olive oil, and roast for 30 minutes or until tender and caramelized.

2
Sauté the chopped onion, minced garlic, and sliced carrots in a large pot over medium heat until the vegetables are tender and lightly browned. Add a pinch of salt and a grind of pepper to season.

3
Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes or until the vegetables are tender and the soup has thickened slightly.

4
Use an immersion blender or a regular blender to puree the soup until smooth. Return the soup to the pot and stir in dried thyme, salt, and pepper.

5
Taste and adjust the seasoning as needed. If the soup needs a touch more sweetness, consider adding a drizzle of honey.

Storage & Reheating

Store leftovers in airtight containers in the refrigerator for up to 3 days. You can also freeze the soup for up to 3 months. When reheating, give the soup a good stir and add a splash of chicken broth if it needs a bit more moisture.
