Ingredients

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

1/2 cup cold unsalted butter, cut into small pieces

2 large eggs

1 teaspoon baking powder

1/4 teaspoon salt

1 cup hulled and sliced strawberries

Whipped cream for serving (optional)

Directions

Preheat oven to 375°F (190°C). In a medium bowl, whisk together the flour, sugar, salt, and baking powder. Add the cold butter and mix until the mixture resembles coarse crumbs. Press the mixture evenly into a 9×13 inch baking dish lined with parchment paper. Bake for 15 minutes or until the crust is lightly browned.

In a large bowl, whisk together the eggs, sugar, and vanilla extract. Add the sliced strawberries and mix until well combined. Pour the egg mixture over the crust and smooth out the top.

Bake for 25 minutes or until the filling is set. Remove from the oven and let cool completely in the pan. Once cooled, refrigerate for at least 30 minutes before slicing and serving. If desired, top with whipped cream and additional sliced strawberries.

Storage & Reheating
