Ingredients

4 lbs boneless, skinless chicken breasts

1 cup chopped parsley

1 cup grated cheddar cheese

1 cup diced onion

1 cup chopped bacon

2 cloves garlic, minced

1 cup chicken broth

1 tsp dried thyme

Salt and pepper, to taste

Directions

1
Preheat your oven to 375°F (190°C). Rinse 4 boneless, skinless chicken breasts and pat them dry with paper towels. Season the chicken with salt, pepper, and dried thyme.

2
In a bowl, mix together 1 cup of grated cheddar cheese, 1 cup of chopped parsley, and 1 cup of diced onion. Lay a sheet of plastic wrap on a flat surface and place a chicken breast in the center. Spoon some of the cheese mixture onto one half of the breast, leaving a 1/2 inch border around the edges. Fold the other half of the breast over the filling to enclose it.

3
Place the stuffed chicken breast seam-side down in a baking dish. Repeat with the remaining chicken breasts and cheese mixture. Drizzle the tops with 1 cup of chicken broth.

4.
Bake the chicken in the preheated oven for 25 minutes or until cooked through. Remove from the oven and let rest for a few minutes before slicing and serving.

5
While the chicken is baking, prepare the bacon. Chop 1 cup of cooked bacon into small pieces and set aside.

Storage & Reheating

Once you’ve sliced your perfectly baked chicken, let the leftovers cool before refrigerating or freezing them. To reheat, place the chicken in a single layer in a baking dish and cover with foil. Bake at 300°F (150°C) for about 15-20 minutes, or until warmed through. Serve hot and enjoy!
