Ingredients

1 lb ground beef

1 packet of taco seasoning

1 cup shredded cheddar cheese

1 cup diced tomatoes

1/4 cup chopped cilantro

8-10 tortillas

1 can black beans, drained and rinsed

1 can diced green chilies

1 tsp cumin

Salt and pepper, to taste

Brown the ground beef in a large skillet over medium-high heat, breaking it up into small pieces as it cooks. Drain the excess fat and add the taco seasoning, stirring to combine. Reduce heat to low and simmer the filling for 5-10 minutes, stirring occasionally, until the flavors have melded together and the filling is heated through.

While the filling is cooking, prepare the cheese sauce by combining the shredded cheddar cheese with the diced tomatoes and cumin in a blender or food processor.
