Ingredients

2 pounds beef (chuck or beef stew meat)

2 medium onions, chopped

4 cloves garlic, minced

1 cup tomato paste

1 cup beef broth

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

2 tbsp all-purpose flour

2 tbsp olive oil

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped onions and cook, stirring occasionally, until they are soft and lightly browned, about 10 minutes. Then add the minced garlic and cook for another minute.

Once the onions and garlic are cooked, set the skillet aside to cool slightly. Sprinkle the all-purpose flour over the cooked onion mixture and mix until well combined.

Add the 2 pounds of beef (chuck or beef stew meat) to a 6-quart or larger slow cooker. Season the meat with salt, oregano, and black pepper. Pour in the beef broth. Pour the onion mixture over the beef in the slow cooker and top with the tomato paste.
