Ingredients

1 lb Ground Beef

2 cups chopped Green Chilies

1 can (14.5 oz) Diced Tomatoes

1 large Onion, diced

2 cups Beef Broth

2 tsp Ground Cumin

2 tsp Chili Powder

4-6 Tamales or Corn Tortillas

1 cup Shredded Cheese

1/2 cup Sour Cream

Cilantro, chopped (optional)

Directions

1
Brown the ground beef in a large skillet over medium-high heat. Once browned, add the diced onion and cook until translucent. Add the chopped green chilies, cumin, and chili powder. Cook for an additional 2-3 minutes.

2
In a separate saucepan, heat up the beef broth over medium heat. Stir in the diced tomatoes and bring the mixture to a simmer. Reduce the heat to low and let it simmer while you prepare the tamale mixture.

3
In a separate pan, shred the tamales or corn tortillas into small pieces. Heat it in a skillet over medium heat for about 2-3 minutes on each side, or until it’s lightly browned and crispy.

4
To assemble the tamale pie casserole, spread half of the beef mixture in the bottom of a large baking dish. Next, add half of the shredded cheese, followed by half of the tamales or corn tortillas, and finally the beef broth mixture. Repeat the layers and top with the remaining cheese.

5
Bake the casserole in a preheated oven at 375°F (190°C) for about 25-30 minutes, or until the top is golden brown and the cheese is melted and bubbly.

Storage & Reheating

For optimal freshness, store leftovers in an airtight container and refrigerate for up to 3 days. Reheat the casserole in the oven at 350°F (175°C) for about 10-15 minutes, or until warmed through.
