Easiest Ever Crockpot Lasagna Recipe

This Crockpot Lasagna Recipe layers uncooked lasagna noodles with ground beef, tomato sauce, ricotta and mozzarella. Brown the beef first, assemble the layers in a greased slow cooker, then cook on high for three hours or low for six. The noodles cook in the sauce rather than in a separate pot of boiling water.

Ingredients

Scale
  • Cooking spray
  • 1 lb extra-lean ground beef
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp each salt & pepper
  • 2 (650mL) jars tomato sauce
  • 1 lb lasagna noodles (can use either oven ready or normal) (uncooked)
  • 1 (475g) tub ricotta cheese
  • 2 cups mozzarella cheese
  • 1/2 cup water
  • Chopped fresh basil or parsley, for garnish

Instructions

  1. Brown the beef in a large frying pan over medium-high heat. When almost cooked through, add diced onion, garlic, salt, pepper and one jar of tomato sauce; combine.
  2. Coat the slow cooker insert with cooking spray. Spread a little meat sauce over the base, then layer uncooked noodles, ricotta, mozzarella and more meat sauce. Break noodles to fit and repeat, usually making three layers.
  3. Spread the second jar of tomato sauce over the top and finish with reserved mozzarella. Pour the half cup of water around the sides.
  4. Choose one schedule: three hours on high or six hours on low. Check that the noodles are tender and the center is thoroughly hot.
  5. Garnish with chopped basil or parsley and portion carefully for serving.
