Cucumber Sweet Pepper Salad

Cucumber Sweet Pepper Salad is a cold, crunchy side made with diced cucumber, sweet bell peppers, red onion and parsley in a lemon-and-olive-oil dressing. Preparation takes about fifteen minutes, followed by at least thirty minutes in the refrigerator. The result is a colorful vegetable salad that needs no cooking.

Ingredients

Scale
  • 2 cups cucumbers, diced

  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil

  2. Whisk olive oil, lemon juice, salt and pepper together in a small bowl.
  3. Combine the cucumber, peppers, onion and parsley in a large bowl, then pour over the dressing.
  4. Toss gently, lifting from the bottom, until the dressing is distributed.
