GREEK MEATBALL BOWL – Healthy & Nutritious

Ingredients

Lean ground turkey (1 lb)
Fresh parsley (1/4 cup)
Fresh dill (1/4 cup)
Red onion (1/2 cup)
Garlic (4 cloves)
Olive oil (2 tbsp)
Crumbled feta cheese (1/4 cup)
Chopped kale (1 cup)
Tahini sauce (1/4 cup)
Quinoa or farro (1 cup)

Directions

In a large mixing bowl, combine the ground turkey, parsley, dill, red onion, garlic, and feta cheese. Use your hands to mix everything together until just combined. Be careful not to overmix.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and use a cookie scoop or your hands to form the meat mixture into meatballs. Place them on the prepared baking sheet, leaving about 1-inch of space between each meatball. Drizzle with olive oil and gently roll them around to coat evenly.

Bake the meatballs in the preheated oven for 18-20 minutes, or until they’re cooked through and lightly browned on the outside.

While the meatballs are baking, cook the quinoa or farro according to package instructions. Set it aside.

In a large skillet, heat some olive oil over medium-high heat. Add the chopped kale and cook until it’s tender and slightly caramelized. To serve, place a scoop of cooked quinoa or farro on a plate or bowl, top it with a few meatballs, and drizzle with tahini sauce. Add some additional kale on top and enjoy!
