Grilled Chicken Broccoli Bowls with Creamy Garlic Sauce are a comforting and flavorful meal made with warm rice, grilled chicken, tender broccoli, and a creamy garlic yogurt sauce.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 3 cups broccoli florets
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 3 cloves garlic, finely minced or grated
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, combine olive oil, minced garlic, paprika, onion powder, salt, and pepper. Coat the chicken breasts thoroughly and let them rest for at least 20-30 minutes.
  2. Toss the broccoli florets with olive oil, salt, and pepper. Roast at 400°F for about 20 minutes until slightly crisp at the edges, or steam for a softer texture.
  3. Heat a grill pan or outdoor grill over medium-high heat. Cook the chicken for about 6-7 minutes per side, depending on thickness, until fully cooked and nicely charred. Let it rest for 5 minutes before slicing.
  4. In a small bowl, whisk together Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper until smooth, thick, and pourable.
  5. Start with a base of warm rice. Add sliced grilled chicken and roasted broccoli. Drizzle generously with creamy garlic sauce and serve immediately.

Notes

You can substitute chicken thighs for a juicier result.
Fresh garlic gives the best flavor; avoid garlic powder in the sauce.
Adjust lemon juice depending on how tangy you prefer your sauce.
Pound the chicken breasts slightly for even cooking.
Let the chicken rest before slicing to keep it tender.
Swap white rice for quinoa or cauliflower rice for variety.
Store chicken, rice, and broccoli in airtight containers in the refrigerator for up to 4 days. Keep the sauce separate and refrigerated for up to 3 days.
