4-6 medium-sized potatoes

1 large onion

2 large bell peppers

2 ripe avocados

1 lime, juiced

1 can black beans, drained and rinsed

1 pack of reduced-fat shredded cheese

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Preheat the oven to 425°F (220°C). Pierce the potatoes with a fork a few times and wrap in foil, baking for 15 minutes or until tender.
