MEDITERRANEAN SPINACH QUESADILLAS – Healthy & Nutritious

Ingredients
1 large onion, diced
2 cloves of garlic, minced
1 cup of fresh spinach
1 cup of crumbled reduced-fat feta cheese
1/4 cup of Kalamata olives, pitted
1/4 cup of chopped fresh parsley
2 tablespoons of olive oil
2 whole wheat tortillas
Directions

Heat olive oil in a pan and sauté diced onions and minced garlic until softened.

Add chopped spinach and cook until wilted, set aside.

Preheat a non-stick skillet over medium heat and place a whole wheat tortilla.

Spread the wilted spinach mixture on half of the tortilla, then top with cheese, olives, and parsley.

Fold the tortilla in half and cook for 2-3 minutes on each side or until the cheese is melted and the tortilla is crispy.
