Salmon Fillets (4)
Coconut Oil (2 tbsp)
Garlic Cloves (2)
Soy Sauce (1/4 cup)
Honey (1/4 cup)
Chopped Fresh Cilantro (1 cup)
Zest of 1 Orange
Wild Rice (1 cup)
Crushed Red Pepper (1 tsp)
Directions
1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the salmon fillets, skin side down.
2
In a small bowl, whisk together coconut oil, garlic, soy sauce, honey, and crushed red pepper. Brush the mixture evenly onto both sides of the salmon fillets.
3
Season with salt and pepper to taste, and drizzle with a bit more honey if desired. Transfer the baking sheet to the preheated oven and bake for 12-15 minutes or until the salmon is cooked through.
4
While the salmon is cooking, prepare the wild rice according to package instructions. Fluff and garnish with chopped cilantro and orange zest.
5
Bake the salmon for an additional 5-7 minutes, or until the glaze is caramelized and the fish flakes easily with a fork. Serve on top of wild rice, garnished with additional cilantro and orange zest if desired.
