Southwest Pasta Salad with Creamy Ranch Dressing

Southwest pasta salad combines wagon-wheel pasta, three kinds of beans, corn, roasted red peppers, and small cubes of Monterey Jack in a creamy ranch dressing. Jalapeños add a sharper bite, while the corn and peppers bring sweetness. It is a substantial side dish with plenty of different textures in each spoonful.

Ingredients

Scale
  • 1 pound dry wagon-wheel (rotelle) pasta, cooked al dente and cooled
  • 1 cup frozen fire-roasted corn, thawed according to package directions
  • 1 cup chopped roasted red peppers, drained
  • 2/3 cup canned black-eyed peas, rinsed and drained
  • 2/3 cup canned pinto beans, rinsed and drained
  • 2/3 cup canned black beans, rinsed and drained
  • 2 jalapeños, thinly sliced
  • 4 ounces Monterey Jack cheese, cut into small cubes
  • 1 1/2 cups mayonnaise
  • 1 packet dry ranch dressing mix
  • 1/2 cup milk
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta according to its package until al dente. Drain, cool with cold water if desired, and drain thoroughly. Prepare the corn according to its package and cool it if cooking is required.
  2. Combine the cooled pasta, corn, peppers, three beans, jalapeños and cheese in a large bowl.
  3. Whisk the mayonnaise, ranch mix and milk in a separate bowl until smooth.
  4. Fold the dressing into the salad until evenly coated. Taste before adding salt and pepper.
  5. Cover and refrigerate until serving; about one hour of chilling is a useful optional rest. Toss again before portioning.

Notes

The preparation and cooking estimates exclude cooling and the optional one-hour chill. Follow the pasta and corn package directions.

Keep refrigerated and use a chilled serving setup at gatherings.
