Ingredients
  

  • 4 cups corn kernels (fresh or frozen)
  • 1 medium onion, diced
  • 1 small red bell pepper, diced
  • 1 medium jalapeño, seeded and diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 8 oz cream cheese (or 1 cup heavy cream)
  • 0.5 cup Cotija cheese, crumbled
  • 1 tbsp lime juice

Instructions
 

  • Sauté onion, bell pepper, and jalapeño in butter until soft. Add garlic and spices.
  • Add corn and broth. Bring to a boil, then simmer for 15-20 minutes.
  • Blend slightly with an immersion blender for texture (optional).
  • Stir in cream cheese until melted. Add lime juice. Serve topped with Cotija.
