Ingredients
  

  • 1.5 lbs chicken breast, cubed
  • 2 tbsp olive oil
  • 2 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup artichoke hearts, quartered
  • 1/4 cup feta cheese, crumbled
  • 1 tsp dried oregano
  • 1 tbsp fresh lemon juice

Instructions
 

  • Heat olive oil in a large skillet. Season chicken with salt, pepper, and oregano.
  • Cook chicken until golden and cooked through. Remove from pan.
  • Add zucchini and sauté until tender-crisp. Add tomatoes, olives, and artichokes.
  • Return chicken to the pan. Squeeze lemon juice over everything.
  • Top with feta cheese and fresh herbs. Serve warm.
  • Serve immediately.
