Ingredients

Fresh Spinach (2 cups)
Feta Cheese (1 1/2 cups, crumbled)
Toasted Pine Nuts (1/4 cup)
Chopped Fresh Parsley (1/4 cup)
Mediterranean Spice Blend (1 tsp)
Cooked Quinoa (1 cup)
Crumbled Feta Cheese (1/4 cup)
Chopped Fresh Cilantro (1/4 cup)
Sea Salt (to taste)
Black Pepper (to taste)

Directions

In a medium bowl, whisk together the Mediterranean spice blend, salt, and pepper. Add the cooked quinoa and mix well to combine.

Heat a large skillet over medium heat. Add the pine nuts and cook for 2-3 minutes, or until lightly toasted.

Stir in the spinach and cook until wilted.

Place a large skillet or griddle over medium-high heat.

Place a large tortilla in the skillet and sprinkle with one-quarter of the quinoa mixture, half of the feta cheese, and half of the spinach mixture.
