Ingredients
1 lb Russet potatoes, peeled and diced
1 onion, diced
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 can (16 oz) black beans, drained and rinsed
1 tsp cumin
1/2 tsp paprika
8-10 corn tortillas

Boil the diced potatoes in salted water until tender, about 10-12 minutes. Drain and set aside.

In a large skillet, heat 2 tbsp of oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant. Stir in the cumin and paprika, cooking for an additional 30 seconds.
