GREEK CHICKEN BOWLS – Healthy & Nutritious

Ingredients
1 pound boneless, skinless chicken breast or thighs
1/2 cup extra-virgin olive oil
2 cloves garlic, minced
1 cup mixed cherry tomatoes, halved
1 cup crumbled feta cheese
1 cup chopped fresh mint
2 tablespoons freshly squeezed lemon juice
1 teaspoon dried oregano
Salt and pepper to taste

Preheat the oven to 400°F (200°C). In a small bowl, whisk together olive oil, garlic, lemon juice, and dried oregano. Season with salt and pepper to taste.

In a large bowl, whisk together the marinade ingredients. Add the chicken and marinate for 10-15 minutes, or until the chicken is coated.

Line a baking sheet with parchment paper or aluminum foil. Remove the chicken from the marinade and place it on the prepared baking sheet. Roast in the preheated oven for 15-20 minutes, or until the chicken is cooked through.

In a medium bowl, combine the cherry tomatoes, feta cheese, and chopped fresh mint.

To assemble the bowls, place a portion of the roasted chicken on each plate or bowl. Top with the tomato and feta mixture, and serve immediately.
