CRUNCHY ZUCCHINI CHIPS – Guilt-Free & Healthy

Ingredients
Two medium zucchinis
One-half teaspoon black pepper
One-half teaspoon salt
One-quarter teaspoon Italian seasoning
One cup grated Parmesan cheese
Two tablespoons olive oil
One egg, beaten (for egg wash)
Parchment paper
Optional: Additional seasonings of choice (garlic powder, paprika, etc.)
Directions

Preheat oven to 400°F (200°C). Slice the zucchinis 1/16 inch thick.

Line a baking sheet with parchment paper. In a shallow dish, mix together black pepper, salt, Italian seasoning, and Parmesan cheese.

Brush the egg wash on both sides of the zucchini slices, then coat evenly with the cheese mixture. Transfer the slices to the prepared baking sheet in a single layer.

Drizzle the zucchini slices with olive oil. Bake for 20 minutes or until crispy and golden brown.
