What Is Shrimp Scampi?

In Italian, scampi actually refers to a lobster-like crustacean, often called Dublin Bay prawns, langoustines, or Norway lobsters. Italian-American cooks swapped in shrimp while keeping the name, and that’s how “shrimp scampi” came to be.

Shrimp scampi pasta starts with shrimp sautéed in a garlic, butter, and wine sauce. It’s typically served over angel hair pasta as an elegant entrée.

Don’t think you need chef-level skills for this one; it truly couldn’t be easier. All you need is a handful of ingredients, a skillet and pot, and around 15 minutes.

The finished dish is rich and buttery, brightened by lemon and finished with a hint of heat. Since there are endless ways to make it your own, it’s a staple every home cook should have.

Ingredients

  • Olive oil – I prefer it as a lighter, healthier option for sautéing the shrimp and garlic. It keeps the dish from being too heavy, since it’s not all butter. No olive oil? Avocado or grapeseed oil work perfectly.
  • Shrimp – Fresh is always best. Choose whatever size you like, but I usually go for wild-caught jumbo shrimp; one pound of that size gives about 20 to 22 shrimp.
  • Garlic – I know it sounds like a lot, but I use both fresh garlic and garlic powder. Fresh garlic adds a zesty kick, while garlic powder brings a milder, well-rounded flavor.
  • Lemon – Lemon juice plus zest delivers the perfect amount of acidity and a bright pop. Bonus: lemons are packed with antioxidants, including vitamin C.
  • Dry white wine – Dry, crisp varieties like unoaked Chardonnay, Pinot Grigio, or Sauvignon Blanc are ideal for cooking. Still, pick one you love to drink since you’ll have plenty left!
  • Lemon pepper – Not a traditional scampi ingredient, but I strongly recommend it to boost the sauce.
  • Red chili flakes – These bring the heat. Skip them if you’re sensitive to spice, or add extra if you can take it.
  • Onion powder – I use it instead of fresh shallots to keep things simple; it adds a subtle savory depth that blends beautifully into the sauce.
  • Parsley – Stir in freshly minced parsley at the end for color and flavor, using as much or as little as you like. Fresh basil also makes a nice swap.
  • Unsalted butter – Swirled in at the end of simmering to give the sauce a rich, creamy texture. Unsalted keeps the salt level in your control.
  • Angel hair pasta – Also called capellini, this is the classic base for shrimp scampi pasta. Don’t rinse the pasta after draining; the starch helps the sauce cling.
  • Salt & pepper – Absolutely essential. Taste and season as you go so you don’t overdo it.

  • SAUTÉ SHRIMP – In a skillet with hot olive oil, cook the shrimp for a few minutes per side. Don’t wander off since shrimp can overcook fast and become rubbery. Once pink, move them to a plate and set aside.

Serving Suggestions

Shrimp scampi pasta is a complete meal by itself, but it’s also great with sides like garlic bread. Is there ever too much garlic, though?

Recipe Variations

This recipe is easy to customize. For gluten sensitivity, choose gluten-free pasta. To keep it low-carb, try spaghetti squash or zucchini noodles (zoodles). Love heat? Be generous with the chili flakes. And if you come up with your own twist, drop it in the comments!

Tips And Tricks

The most important tip for perfect easy shrimp scampi is not overcooking the shrimp. With so few ingredients, preparation matters. Sauté the shrimp for just 1 to 2 minutes per side to keep them tender.

Angel hair pasta is another reason this dinner comes together so quickly. Since it cooks in about 2 to 3 minutes, start it right after you remove the shrimp from the skillet.

No wine? No problem. Use an equal amount of chicken broth, vegetable broth, or seafood broth instead.

What To Do With Leftovers

If you happen to have leftover shrimp scampi pasta, here’s how to store it properly.

For safe storage and reheating, follow the USDA leftovers and food-safety guidance.

This dish stores best when the pasta and shrimp are kept separate. Refrigerate the shrimp in an airtight container within two hours of cooking, and it will stay good for up to 4 days.

Put the pasta and sauce in separate containers and refrigerate for up to 5 days. Some drying is totally normal.

Reheating

Reheating is just as simple. Warm a bit of olive oil in a pan over medium heat, then add the pasta, sauce, and shrimp.

If the mixture looks dry, add 1 to 2 tablespoons of water to get the right consistency. It only takes about 4 to 5 minutes to heat through.

The microwave might seem easier, but it tends to make the shrimp rubbery, so I don’t recommend it.
